baking tip

One kitchen tool I swear by when working with pie crust is my Tovolo Silicone Non-stick Pastry Mat. It makes rolling out the pie dough so much easier and I find I don’t need to use near the amount of flour as I would if using the counter or a cutting board. The best thing about this mat is the easy cleanup and it dries quickly. When you have all those dishes to wash after baking, you’re thankful for something like this!

Whatever your weekend plans are, take some time to get outside and enjoy the warmer temps! Spring is finally here! And if the baking mood strikes you, you should definitely consider making this delicious treat! Enjoy!

Scale

Ingredients

homemade pie crust (makes 1, 9 inch pie crust)

  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 3 tablespoons Unsalted Butter, cold and cut into small cubes
  • 1/4 cup Vegetable Shortening, cold and cut into cubes
  • 23 tablespoons Ice Cold Water or until your pie dough is no longer crumbly

Instructions

homemade pie crust – you can skip this step if buying store-bought!

  1. In a large mixing bowl and using a pastry blender (or two forks), mix together the flour, salt, cold cubed butter, and cold vegetable shortening until you have small pea-size pieces. Some larger pea-size pieces are fine too! You can use a knife to clear out the pastry blender if it gets clogged as you mix everything together.
  2. Add in the ice cold water 1 tablespoon at a time, and using a spatula or your hands, mix together until the pie dough can form a ball and it is no longer crumbly. If there are any crumbly bits, just add the tiniest bit of cold water so they blend in with the rest of the dough.
  3. After forming the ball of pie dough, place it on a lightly-floured, clean surface and pat it into a 1″-1 1/2″ thick disc. Then double wrap tightly in plastic wrap and place in the coldest part of your refrigerator (usually the back) for a minimum of 1 hour or overnight (preferred).

  1. Roll out your refrigerated pie crust and place into a 9 inch pie dish. Trim and decorate the edges as you wish, then place back in the refrigerator to chill until you’re ready to pour the batter.
  2. In a small separate bowl, melt the butter in the microwave for 15-30 seconds at a time at 50% power until melted. Set aside and let cool.
  3. Adjust the oven rack to the 2nd level position and preheat the oven to 350ºF.
  4. Using your hand-held mixer or stand mixer fitted with a paddle attachment, mix together the sugar, eggs, flour, and vanilla on medium speed until blended.
  5. Reduce the mixer speed and add in cooled melted butter.
  6. With a spatula, fold in the pecans and chocolate chips.
  7. Pour the batter into the unbaked pie crust and bake for 45 minutes at 350ºF.
  8. Once done, remove from oven and allow to cool before serving.

This pie was so delicious and easy to make. The recipe was really clear and easy to follow. I’ll definitely be making this again when I want a simple dessert that’s miles above chocolate chip cookies with almost the same amount of effort.
