- I used this 8" x 8" cake pan.
- If you'd like to frost the sides of the cake, you can add a cut strip of parchment paper after coating the cake pan with baking spray. After adding the parchment paper, make sure to spray the top of the paper and sides.
- The recommended baking time for this recipe is 25-30 minutes at 350ºF. I suggest checking the snack cake at 25 minutes and if an inserted toothpick comes out clean, you can take the cake out. If there is still little cake batter on the inserted toothpick (like mine did), place it back into the oven and check it again in a 1-2 minutes. For my oven, the 30 minute mark ended up doing the trick.
- Lightly coat the chocolate chips in some flour to avoid them sinking to the bottom of the cake pan.

- ¾ cup All-Purpose Flour
- ½ tsp. Baking Soda
- ¼ tsp. Baking Powder
- ¼ tsp. Salt
- 2 Medium-size Bananas, well-ripened
- 4 tbsp. Unsalted Butter, room temperature
- ⅔ cup Light Brown Sugar, lightly packed
- ¼ cup Granulated Sugar
- 1 tsp. Vanilla Extract
- 1 Large Egg, room temperature
- ⅔ cup Semi-Sweet Chocolate Chips, lightly coated in flour

- ¼ cup Unsalted Butter, room temperature
- 4 oz. Cream Cheese, room temperature
- ¼ cup Unsweetened Cocoa
- 2 cups Confectioners Sugar, sifted
- 1 tsp. Vanilla Extract
- ⅛ cup Heavy Whipping Cream

Instructions

- Adjust the oven rack to the second level position and pre-heat the oven to 350ºF.
- Generously spray the 8" x 8" cake pan with a flour-based baking spray. Set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- Using a hand mixer or a stand mixer that's fitted with a paddle attachment, beat the butter and bananas together on medium-high speed until well-combined. Add in the brown sugar, sugar, vanilla extract, and egg, and mix together until fully incorporated.
- Switch the mixer speed to low and add in the dry ingredients a little at a time until just combined.
- Before adding the chocolate chips, coat them lightly in some flour which will help them from all sinking to the bottom of the pan during the baking process.
- With a spatula fold in the chocolate chips, then pour the cake batter into well-coated cake pan.
- Place into the oven and bake for 25-30 minutes at 350ºF or until an inserted toothpick into the center of the snack cake comes out clean.
- Allow the cake to cool completely before frosting and adding sprinkles.

- Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and cream cheese together on medium-high speed for 3-4 minutes until the mixture is smooth and creamy. There should be no lumps.
- Switch the speed to low and add in the cocoa, scraping down the sides of the bowl as needed.
- With the mixer speed still on low, add in the confectioners sugar a little at a time until completely blended together.
- Add in the vanilla extract and the heavy whipping cream, and beat on medium-high speed until the frosting is smooth and creamy. If the frosting is too thick, you can add a teaspoon of heavy whipping cream until the desired consistency is achieved.
- Frost the snack cake, add on some sprinkles (optional), and enjoy!
